Growing more than 60% of the total U.S. sweetpotato supply, North Carolina ranks as the No. 1 state in the nation for its production, a statistic that has earned sweetpotatoes the title of official state vegetable. And while they’re easy to find in North Carolina all year round, peak sweetpotato harvest season runs from late August through November, making their flavor synonymous with comforting fall and winter dishes.
