Summer fruits are so plentiful right now that it’s almost frustrating. It’s like seeing everyone we love at a joyous family reunion. The visits are too short. The hugs and stories are too few. But we absorb and consume all we can. These bursts of freshness and flavor have to sustain us for a long time.

At first, I thought I’d make a savory goat cheese cheesecake. Then, I thought about the tangy notes in N.C. goat cheese like I think of yogurt. A bit of honeybee sweetness paired with that smack of goat cheese goodness is very dessert-like, and apricots nudge it right into summer. As the fruit and simple syrup mixture cooks, the scent of apricot blooms. The resulting No-Bake Apricot Goat Cheese Tart is piquant and rich.
