Homemade strawberry ice cream

Cool down on a hot summer day with fresh, homemade strawberry ice cream.

Ingredients

  • 4 cups whipping cream
  • 1 ½ cups sugar
  • 1 ⅓ cups half-and-half
  • 2/3 cup sugar
  • Juice of one lemon
  • 1 quart strawberries, sliced

Instructions

  1. Combine the strawberries, 2/3 cup of sugar, and lemon juice in a mixing bowl. Cover and refrigerate.
  2. Pour cream into a mixing bowl. Whisk in 1 ½ cups sugar, a little at a time, and continue whisking until completely blended. Pour in the half-and-half and whisk to blend.
  3. Remove berries from the refrigerator, mash and stir into the cream base. Transfer the mixture to ice cream maker and freeze. Makes a half-gallon.
