Owens’ Hush Puppies
Ingredients
2 ½ cups self-rising flour
1 cup white cornmeal
2/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 egg
1 ¼ cup cold water
¼ cup evaporated milk
Instructions
Mix first five ingredients thoroughly; add egg and blend well. Combine milk with cold water; pour all liquid into the dry mixture. Mix gently, but quickly, just enough to blend everything together. Allow to rest 10 minutes at room temperature. Drop batter by rounded teaspoons into 325-degree vegetable oil (dip spoon in cold water after dropping each spoonful). Fry, rolling frequently, until golden brown, 6-8 minutes.
