What happens when a student at the Yale School of Engineering drops out? He becomes a Haywood County trout farmer, of course.

Sunburst Trout Farms began in 1948 under Dick Jennings and has grown to become the second-largest trout supplier in North Carolina. Dick’s grandsons Wes and Ben now run the farm, raising trout in the pristine waters of the Shining Rock Wilderness Area in the Pisgah National Forest. The fish are brought over to the processing center in Waynesville up to three times each week. Each morning, the team arrives early to ensure the highest-quality product for their customers.

Today, the farm has a 12,000-square-foot facility that is home to the Sunburst Market storefront and processing site. They sell whole trout served at destinations across the nation, including the renowned Biltmore Estate and Grove Park Inn.     On my gift giving list — Mother’s day giftbasket for my 101 year old grandmother! Yule gifts for others. I’ve had salmon jerky in the Pacific North West and loved it. Can’t wait to try some of the trout jerky!

    I would like to win because I love trout (and other fish), and I have never tried fish jerky before. I find that very intriguing, and it sounds tasty, too!

    I’ve never tried trout jerky but it looks great! It reminds me of smoked salmon or the fabulous smoked carp my mom used to make.
