Saltine Tomato Salad Recipe

Chef Matthew Register owns Southern Smoke BBQ in Garland and has published a cookbook, Southern Smoke: Barbecue, Traditions, and Treasured Recipes Reimagined for Today. Register works with local farmers to incorporate fresh, North-Carolina grown ingredients in his dishes.

Farmer Billy Augustine is co-owner and president of American Dream Produce in Sampson County. He is part of a multigenerational group of local produce-growing farm families, including his own. These hardworking men and women tend more than 1,000 acres of blueberries, 1,500 acres of cropland, and 15 acres of high tunnels and greenhouses using sustainable growing practices. The company packs fresh fruits and vegetables under the labels Pretty Boy Farms and Pretty Girl Organics.

“It has been a privilege to watch Matthew’s hard work and dedication as he passionately grows his business in a small, rural town in eastern North Carolina,” Augustine says. “There is no better feeling than to see the fruits of our labor utilized in some of the amazing recipes he creates throughout the year.”

Ingredients

  • 5 medium tomatoes, diced
  • 1 cup Duke’s Mayo
  • 2 cloves garlic, minced
  • 5 basil leaves, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1 sleeve saltine crackers, coarsely broken

Instructions

  1. In a large bowl, combine the tomatoes, mayonnaise, garlic, basil, salt and pepper. Stir to combine. Refrigerate salad until ready to serve.
  2. Just before serving, stir in the broken saltine crackers.
