North Carolina ranks near the top for production of poultry. Why not try a recipe for Chicken Salad Pie Cups? These little tartlets are so cute and delicious. Use a muffin tin to shape the crust and make muffin-sized cups to hold the filling, which is perfect for a hot day – full of chicken, fresh herbs, and just enough mayonnaise and Greek yogurt to hold it all together.
