The recipes developed for this story are meant to salute North Carolina farm products, while adding a few new elements to enhance the flavors and great selection grown in state.
And while there’s nothing like a homemade pie crust, we won’t tell if you use store-bought – the fillings are the stars for these recipes.
North Carolina ranks near the top for production of poultry. Why not try a recipe for Chicken Salad Pie Cups? These little tartlets are so cute and delicious. Use a muffin tin to shape the crust and make muffin-sized cups to hold the filling, which is perfect for a hot day – full of chicken, fresh herbs, and just enough mayonnaise and Greek yogurt to hold it all together. This uptick on an old-fashioned dish is perfect for a picnic, a lady’s luncheon or a light dinner.

I love Field and Family- the new NC Farm Bureau magazine. The articles are well written and interesting and I love the recipe section. Can hardly wait to try this month’s lemon pie. Vivian Howard’s recipes are always great.
